This dinner is my go-to when I don’t know what I’m in the mood for. It’s quick, easy and healthy!
- Red onion
- Kidney beans
- Cherry tomato
When boiling the bulgur i prefer to use some vegetable broth instead of salt for more taste. My favorite is from Renée Voltaire, no preservatives or weirdness added.
When it’s done I mix it with the beans, a pressed garlic clove and some basil (fresh or dried depending on what you like).
While the bulgur is cooking I just fry the halloumi in some olive oil.
And it’s done! Chop up some tomatoes, onion, olives and top it off with some black pepper and ruccola and enjoy. It’s really yummy to put some sun dried tomatoes in there as well, but we didn’t have any at home.
