Kale, kale, kale. You’ve all heard about how healthy and trendy it is to eat right now. Kale salad, kale chips, kale pancakes, kale everything. There’s no doubt about the nutritional value of kale. It’s full of vitamins A, C, K, and B6, and minerals like iron, calcium, and potassium. However, boiling the kale will diminish all of this, so you’ll have to steam it or eat it raw if you want all the vitamins etc. Then we reach our problem: Raw kale is not that yummy. At least this was true before I found out how to make it delicious!
Spice up your kale:
- Olive Oil
- Take your kale and press some lemon juice over it.
- Sprinkle olive oil and salt.
- Mix it around, or “massage it” as Cassey said.
- Let sit for 10 minutes before eating it. Mix it in a salad or eat it as a side dish to your regular meal.
This is what it might look like when it’s done. In my bowl you’ll find spinage, kale, olives, steamed broccoli, cauliflower, and carrots, and some fried halloumi.
